  • 125g caster sugar

  • 25g flaked almonds
  • 150ml double cream
  • 1 large egg white
  • 75g caster sugar

Instructions

  1. Preheat your oven to 180°C.
  2. Cream together the butter, sugar and vanilla extract in a large mixing bowl until light and fluffy. Beat in the eggs, one at a time, until well combined.
  3. Sift in the flour and baking powder and fold into the mixture until it forms a smooth batter.
  4. Using a spatula, transfer the batter to a greased 20cm round cake tin and spread it out evenly.
  5. Arrange the sliced apples on top of the batter in a circle, overlapping them slightly.
  6. Sprinkle the flaked almonds over the apples.
